This week on Simply Sweet Allison we made lemon raspberry bars! These are a refreshing and light dish that is perfect for a warm summer day. Your family will not be able to resist and they are super simple to make.
Ingredients:
Crust-
- 2 cups flour 
- ½ cup sugar 
- 1 cup butter, softened 
Filling-
- 4 eggs 
- 1 ½ cups sugar 
- ¼ cup flour 
- 2 lemons, zest and juiced 
- ½ cup raspberries 
Directions:
- Preheat oven to 350 degrees. 
- Make the crust by mixing flour, sugar and butter together until the butter is the size of peas. 
- Pour the crust into a greased 9 x 13 pan using your knuckles to evenly distribute on the bottom of the pan. 
- Bake for 20 minutes. 
- Make the lemon filling by beating four eggs in a bowl. 
- Mix in sugar, flour and lemon zest and juice until incorporated. 
- When the crust is out of the oven, pour the mixture over the crust. 
- Add raspberries in a row. 
- Bake for another 20 to 25 minutes until the filling has thickened. 
- Cut while warm to prevent cracking.
