This week on Simply Sweet Allison we made lemon raspberry bars! These are a refreshing and light dish that is perfect for a warm summer day. Your family will not be able to resist and they are super simple to make.
Ingredients:
Crust-
2 cups flour
½ cup sugar
1 cup butter, softened
Filling-
4 eggs
1 ½ cups sugar
¼ cup flour
2 lemons, zest and juiced
½ cup raspberries
Directions:
Preheat oven to 350 degrees.
Make the crust by mixing flour, sugar and butter together until the butter is the size of peas.
Pour the crust into a greased 9 x 13 pan using your knuckles to evenly distribute on the bottom of the pan.
Bake for 20 minutes.
Make the lemon filling by beating four eggs in a bowl.
Mix in sugar, flour and lemon zest and juice until incorporated.
When the crust is out of the oven, pour the mixture over the crust.
Add raspberries in a row.
Bake for another 20 to 25 minutes until the filling has thickened.
Cut while warm to prevent cracking.
