This week on Simply Sweet Allison we make a refreshing and healthy quinoa salad with all of your favorite Mediterranean ingredients.
I love all types of Greek food. My mom and I always used to whip up this easy quinoa salad to be paired with grilled chicken or even as a snack on a warm day. It is very healthy and fresh, so you won't have to feel guilty about eating most of it in one sitting, like I do!
Ingredients:
Quinoa Salad-
- 1 cup cooked quinoa
- 1 cucumber
- 1 cup cherry tomatoes
- 1/2 red onion
- 2 tbsp. pitted olives
- 1/2 cup feta
Dressing-
- 1/2 cup olive oil
- 2 tbsp. red wine vinegar
- 1 tbsp. honey
- dash salt and pepper
- 1/2 tsp. dried oregano
- 2 tbsp. feta
Directions:
- Chop all the veggies into bite sized pieces.
- Add into bowl with cooked quinoa, feta and oregano.
- Mix the ingredients for the dressing into a mason jar and shake until incorporated.
- Pour dressing over quinoa and ENJOY!
