Happy Jack's shows us how they make their most popular pies

BAKERSFIELD, Calif. — With Thanksgiving quickly approaching, Happy Jack’s owners Ruben and Frances Rosales showed us how they can some of their favorite pies here.

“We’re showing you peanut butter, chocolate, coconut, banana and Rudy, which is a combination of peanut butter and then chocolate over it," said Ruben.

So here’s the mixture you start with for any of those pies.

“It’s the basic pie filling for the creme pies. Sugar. Cornstarch. A little salt. Milk and eggs. I’m going to stir this up right now and get it all mixed," said Ruben.

But not too much.

“You can see how creamy it is. If you get it too thick, it’s like eating cement," said Ruben.

And then you add in flavor, like peanut butter or a sliced up banana.

“Some people, what they do, they put in banana flavoring," said Frances.

But not here. Frances says natural ingredients give the best flavor straight from the source. And some of these pies have layers of different flavors.

“This is the bottom for the Rudy pie. Chocolate will go on top of that," said Ruben.

Then the pies are cooled before serving them up with whipped cream. Happy Jack’s has been around for over 40 years and they continue to prove you can never have too much pie, especially during the holiday season.
